Chef Jorge Olarte
Born and raised in South Florida, Chef Jorge pursued a career in culinary arts on a whim after trying his hand at various other vocations. After graduating from culinary school over 15 years ago, he went on to work in some of NYC’s most respected kitchens including Cafe Boulud (2 Michelin stars), Momofuku Ma Peche, and Momofuku Ssam Bar. He met his current business partner, Paul D’Avino, while working at Gwynnett Street where they bonded over a shared passion for all things pasta. The two of them are set to open a new-age and experimental Italian restaurant called Cafe Mars in Brooklyn in Fall 2022.
