Chef Paul D'Avino

Raised in Connecticut, Chef Paul fell in love with food at age 22, when he found himself cooking a Thanksgiving meal for eight new Swedish friends in Stockholm. His newfound culinary calling drove him to the award-winning kitchens of wd~50 (1 Michelin star), Aska (2 Michelin stars), and Gwynnett Street, where he met his current business partner Jorge Olarte. Together, they connected over a shared love of Italian flavors and began making plans to open their own restaurant, Cafe Mars (opening in Brooklyn, Fall 2022)
