CHEF PAUL D’AVINO

Raised in Connecticut, Chef Paul fell in love with food at age 22 when he found himself cooking a Thanksgiving meal for eight new Swedish friends in Stockholm. His newfound culinary calling drove him to the award-winning kitchens of wd~50 (1 Michelin star), Aska (2 Michelin stars), and Gwynnett Street, where he met his current business partner, Jorge Olarte. Together, they connected over a shared love of Italian flavors and Japanese techniques. Because of this, they have plans to open their own restaurant, Cafe Mars, opening in Brooklyn in Fall 2022.
