CHEF LUIS LISING
Born in Pampanga, Philippines, Chef Luis Lising moved to Oahu, Hawaii at age three. He learned to cook by watching his mother, father, and aunt in the kitchen, and cooking shows like Barefoot Contessa fueled an early curiosity that had him experimenting on his own by fifth grade. Around then, his mindset began to shift from considering food just as a means of survival to a means of expression. His high school culinary program, and its instructor, provided the encouragement that Luis needed to decide to commit his career to cooking.
Chef Luis began his professional career in 2015 at Morimoto in Honolulu, where work on the sushi pantry gave him a precise, disciplined foundation in Japanese technique. He then spent four years at Fête under James Beard Award-winning chef Robynne Maii, progressing from line cook to Chef de Tournant and learning, through the trials of the pandemic, what genuine hospitality and leadership look like even under extreme circumstances.
In late 2021, Chef Luis moved to New York City. He joined Al Coro (★★) under executive chef Melissa Rodriguez out of a desire to explore the fine dining world. This experience allowed him to deepen his knowledge of Italian cuisine and large-kitchen management. Next, he joined Margot in Fort Greene, where he rose from sous chef to executive chef over two years.
Chef Luis's cuisine is rooted in Hawaii Regional Cuisine: a tradition born during the plantation era, when workers from across the Pacific came together and shared their food. His food is ingredient-driven and deeply influenced by his Filipino heritage, with a focus on fresh produce, herbs, and umami, and an abiding commitment to indigenous practices and zero waste.
